Fish freshness
First and foremost fresh fish is distinguished by its firmness. Fish, when perfectly fresh, will lie in your hand in a straight line, neither head nor tail drooping. If your press fresh fish with your thumb it will leave no mark, because its flesh is firm and resilient. Fresh fish has bright-red gills, its flesh an even creamy white or pinkish color, skin bright and clean.
Fish & wine
Classic rule is to combine fish and seafood with white wine. Fish protein is better digested with the help of white wines, that are usually high in acidity. Besides, white wine compliments the flavor of fish and seafood making it even fresher and more pronounced. Light red wines are sometimes good for fish and seafood dishes too, but this combination can sometimes leave you with a metallic aftertaste in your mouth.
